Spicy Lime Tequila Chicken Wings

Chicken wings are not a good menu choice if you are watching fat or cholesterol levels, but sometimes it might be okay to cheat. I trimmed about ½ the fat off 6 chicken wing pieces (3 or each type) and brined them in a mixture of cold water, sea salt, about ¼ cup of tequila and the juice of     ½ of a lime. For my glaze, I mixed about 1/3 cup of presidents choice Memories of Thailand (any sweet chili sauce would work) with the juice of ½ lime and a splash of soy sauce (fish sauce would also work). I baked the chicken wings at 375 for twenty minutes (the wings were on a cooking rack to drain more fat), and then finished with another 20 minutes on the grill. Once the wings were cooked through, I tossed in the sauce and enjoyed (hubby cooked the other 6 wings in the over 45 minutes and tossed with Franks extra hot sauce). Happy Saturday evening
